Chipotle Sweet Potatoes

Last month, BlogHer came into town. On the night before things got into full swing, Vicks hosted a private event at East Village Tavern + Bowl. As one of the official bloggers of the Vicks Vaporub Blogger Brigade, my Chipotle Sweet Potatoes were served to the guests of the party. It was so much fun seeing my side dish gracing the plates at the party! It took me a while to my self a plate walking through the sea of old friends, hugging and chatting all the way to the buffet. If someone had a plate of food with my sweet potatoes on it, I'd ask how they liked my special recipe. Most everyone did like them, but some ladies said, "Ooohh... spicy!" Chef and owner of East Village Tavern + Bowl, Kevin Roberts (also of FoodDudeTV) served my Chipotle Sweet Potatoes with a bit more chipotle than I normally use. That's because, as he said, he likes it hot! When I finally got to the buffet to try them myself, I might have squealed a bit too loudly seeing this:

It's the little things...

Throughout the restaurant, bar, and on back through to the bowling lanes, Vicks was most definitely in the house! The color green was everywhere, including huge columns made of green balloons (which we snagged at the end of the night hooked to my car just for fun). There were also several displays of Vicks' new line of NatureFusion products. I had a horrible cough that night, so they sent me home with the new NatureFusion Cough & Chest Congestion formula. When I tasted it, I knew for sure it was made with real honey, just like the label says!

As part of their campaign to let people know about the new NatureFusion line, Vicks will be featuring some of the Blogger Brigade recipes in food magazines this fall. And guess what? My Chipotle Sweet Potatoes will be part of that campaign!! Seeing as how you're so nice to come here and read my blog, I'll let you have the recipe ahead of time. ;)

So here it is, in all it's sweet and spiciness but without exact measurements. I'm a cook-to-taste kinda girl.

Roasted Chipotle Sweet Potatoes


  • Sweet potatoes
  • Olive Oil
  • Scallions
  • Chipotle Powder
  • Salt & Pepper


  • Peel and dice sweet potatoes (enough to serve your needs)
  • Toss in Olive Oil
  • Add minced scallions
  • Season with salt, pepper, and chipotle powder (not too much chipotle!) <--- This was probably seen as a dare by Chef Kevin
  • Toss all ingredients
  • Transfer to baking sheet
  • Bake at 350 until tender
